Cut 2 lbs beef chuck or other roast into 1 in cubes.
Roll in flower and fry in a little salad oil in dutch oven until browned,
Spoon off all but 1 T. salad oil, add 2 cans beef broth, 2 T. red wine.
Simmer, covered, for 1-2 hours until tender.
Mix 1/4 c. flour into cold water until pasty but not lumpy. Use this to thicken gravy.

Mix 2 1/2 c. water, 1 c. rice, 1 can cream of mushroom soup, 1 envelope Lipton onion soup.
Pour into large baking pan (Lasagna pan).
Place 2-3 lb. quartered or cut up fryer pieces on top of rice mixture.
Bake 1 hour in 350 oven covered with foil.
Bake 1/2 hour uncovered.
(To use pork instead of chicken, trim fat from, then brown in skillet 6-8 pork chops. Then follow the
above recipe.)

3 cups shredded beef
1 tbl lard
1 cup beef broth
1/4 cup fresh tomatoes, diced
3 tbl yellow onion, diced
1 1/2 tsp black pepper
2 tsp garlic powder
salt to taste
6 large (14 inch) flour tortillas
Shortening for deep frying
Combine all ingredients except tortillas and shortening in large pot
and simmer for 1 hour. Let mixture cool slightly.
Put one-sixth of meat on one end of tortilla. Roll into a burro with
both ends folded in. Deep fry until golden brown in shortening heated to
350 degrees.
Top with guacamole and/or sour cream, shredded cheese and garnish
with green onions and a black olive.
Makes 6 chimichangas.

1 1/2 c. cooked crabmeat.
1 c. sliced celery.
1/4 c. chopped olives (optional)
1 hardboiled egg (optional)
1/2 t. minced onion.
1/2 c. mayonaisse
1/4 c. (orange) french dressing (not oil & vinegar).
salt & lemon juice to taste.

Mix 1/2 c. water, 1/2 c. white vinegar, 1 1/2 t. salt, and 4 t. sugar.
Slice two cucumbers and 1/2 onion very thin.
Mix and refridgerate at least two hours.

Heat 2 cans chicken stock (Campbell's soup) plust 1 1/2 cans water.
Put a drop of sesame oil and 1/2 t. chopped green onions in the bottom of each soup bowl.
When stock boils, add salt to taste.
Beat an egg or two 15 seconds, then drizzle into soup in thinnest possible stream from a measuring cup.
Let egg rest in soup before stirring.

2 tbl lard or bacon grease
frijoles (cooked pinto beans)
1 1/2 cups beef broth
2 cups shredded cheese
Heat lard in skillet until almost smoking. Add frijoles and fry.
Add beef broth and stir thoroghly to avoid scorching. Add cheese and
blend. When cheese is melted and blended, refried beans are ready.

1 1/2 c. diced ham
8 peeled and sliced potatoes (sliced about one-eighth inch thick)
3 T. minced onion
Heat oven to 300.
Make white sauce: melt 2 T. butter in a saucepan, add 3 T. flour.
Add 2 1/2 c. milk, plus salt and pepper to taste.
Put about 1/3 of the potatoes in a buttered Lasagne pan, sprinkle 1 T. onion over it
then sprinkle 1 T. flour on it. Add 1/3 of the ham.
Continue making two more layers.
Pour white sauce over all. Add enough additional milk to casserole until the milk just covers the potatoes.
Dot with butter.
Bake 1 1/2 hour, uncovered.

Heat oven to 375.
Remove the skin of a garlic cluster, but leave the cloves together and don't
remove thier skins.
Put 4 heads of garlic into aluminum foil and seal it.
Bake 1 1/4 hour.
Toast French bread and butter it. Squeeze out the garlic from the cloves.
Spread warm garlic puree onto the bread.

Have 1 c. cooked white rice on hand.
In 3 T. oil, saute 1 c. chopped onion, 1 c. diced celery, and 4 cloves garlic, until cooked through.
Add 2 partly drained 15 oz. cans kidney beans, 2 c. water, 6 drops tabasco sauce, 1 T. Worchestershire
sauce, 2 bay leaves, salt & pepper.
Cook slowly, stirring now and then, for about 2 hours until it reaches the consistancy of baked beans.
Fry 1 lb. diced ham and 1/4 lb. sausage until sausage is cooked through.
Add meat to beans, remove bay leaves.
Add 1/2 c. chopped fresh parsley and 1/2 c. chopped celery leaves.
Simmer for anywhere from 2 min. to 2 hours, adjusting salt & pepper and adding water if necessary.
Serve over rice.

Heat oven to 350.
In large skillet, saute 1 c. chopped onion with 1 lb. ground beef until onion is transparent.
Stir in 1 can Campbell's Tomato Bisque (or spicy tomato) soup, 1 can water, 2 cups uncooked macaroni.
Cook until mcaroni is tender, stirring and adding water as necessary.
Add 17 oz. can creamed corn, salt and pepper.
Bake uncovered 25 min.
Add 1 cup shredded American cheese.
Bake 20 min. more.

Heat oven to 400.
In saucepan, melt 4 T. butter.
Add 2 t. salt, 1/2 t. dry mustard, 2 T. flour, and a pinch of minced onion and pepper.
Heat, stirring, until thickened.
Slice in 1 lb. Velveeta cheese, 1/4 c. parmesan, and 1/2 lb. sharp cheddar.
Stir until melted.
Cook 1 lb. macaroni.
Rinse in cold water and mix with two beaten eggs.
Add cheese sauce.
Sprinkle more cheddar on top and dot with butter.
Bake 20 min.

Follow directions for Good Seasons Italian Dressing,
except use olive oil instead of salad oil and add 1/2 t. sugar.

Heat oven to 350
Grease a 10 x 7 x 1" square pan with butter.
Stir 2 eggs (at room temperature, if possible) into 3/4 c. sugar and 1 1/2 t. vanilla.
Add 1/2 c.. melted butter.
Sift 3/4 c Ground Baking Chocolate (sweet) plus 3/4 c. cake flour and 1/4 t. baking powder,
and 1/2 t. salt into the egg mixture.
Add 2/3 c. chopped pecans.
Spread mixture into pan and bake for thirty minutes.

Buy 1 lb. small cucumbers. Wash and slice about 1/4 " .
Slice 1/2 onion.
Mix 1/8 c. sea salt (or "plain salt") with 1 c. cracked ice.
Put everything into a strong sealed plastic bag, put a weighted plate on top, and let sit 3 hours.
Drain and rinse.
Combine 1/3 c. sugar, 1/3 c. white vinegar, 1/8 t. tumeric, 1/8 t. mustard seed, 1/8 t. celery seed.
Pour mixture over vegetables in a glass or ceramic saucepan.
Bring to boil over low heat.
Cool and refrigerate.

Mash one slice of white bread into 1/3 c. milk until gummy.
Mix together with:
1 lb. very lean hamburger, 1. T. finely minced onion, 1 T. chopped fresh parsley, 1 egg,
pinch of marjoram, 3 T. freshly grated Parmesan cheese, 1 T. olive oil, 1/2 t. salt, pinch of pepper.
Mix gently by hand.
Shape into 1" balls and roll in unflavored bread crumbs.
Pour salad oil to a depth of about 3/4 " into a skillet. Heat medium. Brown meatballs on all sides.
Drain on paper towels. Pour out oil and stir in 1 large can tomatoes (chopped), 1 large bottle of
Prego meat sauce (or similar).
Add meatballs, 2 T. red wine, cans of mushrooms if desired.
Simmer 1-2 hours.

Drain hot, cooked spaghetti.
Add 1 T. minced onion, 1 t. dried savory, 3 T. butter, and 1/2 c. freshly grated Parmesan cheese,
2 T. hearty chicken stock.
Toss together and serve at once.

Italian Pasta

Heat 5 T. olive oil over low.
Add 2 T. chopped garlic and 2 t. chopped fresh parsley.
Simmer to soften 20 minutes, stirring from time to time.
Add one or two cans minced clams with juice.
Simmer 5 min. more.
Pour over 1/2 lb. cooked spaghetti.
Serve with freshly grated Parmesan cheese.

In heavy large pan (Dutch Oven), put 1 lb. split peas, 3 qts. water.
Dice 1 medium onion, 1/2 carrot, 1/2 potato.
Add all plus 1 ham hock and one bay leaf.
Bring to a boil and simmer for 3 hours. Add 1 t. Worchestershire sauce, celery salt, and pepper to taste.
Add a pinch of thyme, cayenne pepper.

Cook 1 c. chopped onion, 1 clove minced garlic, and 1 lb. ground beef in frying pan until onions are soft.
Add 2 t. chili powder, 1/2 t. salt, 1/2 t. pepper, 2 cans tomato soup.
Simmer, covered for 10 min.
Meanwhile, cut six green peppers lenghtwise in half, remove seeds, and cook in boiling salted water 3 min.
Drain and rinse in cold water.
Add 1 1/2 c. cooked rice and 1/2 lb. shredded sharp cheese to hamburger.
Stuff, then put peppers on baking sheet and cook at 400 for 20 min.
OR
Put peppers on baking sheets and freeze. When frozen, transfer to sealed plastic bags.
To cook frozen peppers, 400 for 45 min.

Marinate 3-24 hours 3 lb. cut up chicken wings in:
1/4 c. brown sugar, 1/4 c. soy sauce, 3 T. lemon juice, 3 T. water, 2 T. salad oil, 1/4 t. garlic powder.
Cook 30 min, turning once in:

Combination microwave/convection oven (using combo cooking set at 350).

Chinese Appetizer

Sift CAKE flour to make 1 1/2 c. (5 1/2 oz.)
Heat oven to 350. Butter two round cake pans, and put waxed paper on bottoms.
Sift into large bowl: the flour, 1 c. Giradelli ground sweet chocolate (or other sweet baking choc.),
3/4 c. sugar, 1/4 t. cream of tartar, 1 1/2 t. baking soda, 3/4 t. salt, 1 T. Droste Cocoa (or other quality cocoa)
Add 2/3 c. Crisco (5 1/8 oz.) and 3/4 c. buttermilk.
Beat on low to combine, then beat at medium 2 min.
Add 1/4 c. buttermilk, 2 eggs, 1 t. vanilla (always use REAL vanilla). Beat 2 min. more.
Bake 30-35 min. Cool 10 min. on rack. Remove from pans and cool completely on rack.
FROSTING
In a 2 qt. heavy saucepan, heat 1/3 c. half & half, 1/2 c. cut up butter, & 2 T. sugar.
Stir until smooth.
Add 1 1/2 c. Giradelli chocolate (or other), 1 T. Droste Cocoa (or other).
Mix with wire whip or fork until it's smooth.
Heat this over medium until it's thick and shining and falls off the spoon like maple syrup and
the first bubble appears on the surface (this is a temperature of 160. Don't boil it or overcook it.)
Cool the frosting five min. then add 1 t. vanilla (real vanilla).
Place the pan of frosting in a bowl filled with ice cubes and water.
Beat it slowly with a spoon until the frosting is stiff enough to spread. Frost cake.
Finely chop 1 c. pecans. Press pecans around the entire sides of the cake.
Add shaved chocolate to the top if desired. Decorate as desired. ^ dessert
